The cookery is heavily influenced by Spain, and in particular Andalucia. This means paella, and arroz negro, and gazpacho, and pinchitos morunos, and papas bravas, and the wonders of Spanish charcuterie. We also range around the Mediterranean to Italy and Greece, Turkey and Lebanon, and to various corners of northern Europe, and to China for dim sum, and to Japan for sushi. And we do a mean barbeque.
